Mango Coconut Rice Pudding

  • 3/4 cup Arborio Rice
  • 1 1/2 cups water
  • 1 can light coconut milk
  • 1 tsp salt
  • 1/3 cup brown sugar
  • 1/2 cup half and half
  • 1 tsp vanilla
  • 1 mango, peeled and cubed

For garnish

  • 1/4 cup shredded coconut, pulsed in food processor
  • 1/4 cup almonds, pulsed in food processor


Add rice, water, coconut milk, sugar, and salt to the pressure cooker. Use the manual setting and set the time to 7 minutes at High pressure. Let the cooker to cool down naturally. Unlock the lid and uncover rice. Add in half and half, vanilla, and chopped mango. Stir together. Serve in small bowls with toasted coconut and almonds over top.

    Am trying this recipe now :) Wondering how long it needs to cool in the pot? After the 7 min cooking time, do you release the steam and let it stay in there? Thanks!!!

    I made this and it was salty and soupy. I made it again with 1 cup water, 1/2 tsp salt, 1/4 cup brown sugar, and no half and half and it was delicious. You can always add more sugar and salt later!

    I was wrong – after setting and cooling for a while, it became very thick! I ended up adding all the half and half I had previously left out, and I will add all the water next time (but maybe less half and half).

    CAN you cook a turkey or chicken with dressing inside of it?

    I love whole chickens with dressing in them.

    I have the 6 quart IP LUX model and for the life of me, I can’t figure out how to adjust the pressure during manual cooking. What to do? I have a recipe I’d like to make that calls for low pressure and I have looked far and wide for instructions somewhere. Thanks so much!

    Hi Kay,

    IP-LUX series only has one pressure level, which is High. If your recipe ask for Low pressure, unless it’s for delicate food material, you can use High with about 10~25% less time.
    IP-DUO has the High and Low pressure level.

    This is also an issue for me. I have Miss Vicki’s pressure cooker cookbook. All recipies say cook on low pressure but, when using manual setting you can’t change the pressure. So, just to clarify, I would just cut the cook time 10-25%…

    Also… if a general(such as Ms. Vicki) pressure cooker recipe is for chicken (for example) would you recommend using the Poultry setting on the instant pot OR use the manual setting?

    Hi Karen,

    Our IP-LUX/IP-CSG series have just one pressure level. But our IP-DUO and IP-Smart series have High and Low pressure settings.

    For cooking chicken, you can use Poultry program for simplicity. If your recipe calls for a different cooking time, please use the Manual function.

    Tried this and after 10 minutes of cooking the mixture was kind of soupy. Perhaps I set the cooker incorrectly? How do I set the pressure to “high” as the instructions suggest?

    Hi Pedro,

    The mixture beingp soupy is caused by too much water. On Instant Pot IP-LUX/IP-CSG series, the default pressure setting is High.
