Hip Bone Broth

A good bone broth is cloudy with bits of collagen, gelatin, calcium and fat suspended in the soup.  Boiling motion is critical to make good bone broth. Electric pressure cookers normally don’t have boiling motion under pressure. This is perfect for making clear stock, but not cloudy bone broth.  With Instant Pot Smart, you can program the cooker to constantly be under and off pressure to create the boiling motion.

  • 6 cups (1.5L) water
  • 1 teaspoon apple cider vinegar
  • 1 medium yellow onion, peeled and halved
  • 1″ knob ginger, sliced into rounds
  • 1/2 cup dried mushrooms, such as shiitake, oyster or procini
  • 3-4 pounds (1.5-2 kilos) of mixed bones


  • Start the “hip bone broth script” and a the water and vinegar to the pressure cooker.
  • When the water is boiling and the screen displays “food” add the onion, ginger, and mushrooms.
  • Next, add the bones delicately, so as not to don’t splash yourself with boiling water, by inserting half in the water before dropping it in.
  • Close the pressure cooker lid.
  • When the script is finished, strain the broth.
  • Let the broth cool and cover tightly.  Refrigerate for up to three days or freeze for up to three months.
  • Optionally, after the broth has been in the refrigerator a few hours, you can remove the layer of fat that will have separated from the broth and discard it.
  • Use as a base for soups or to replace stocks.

    The script did not work for some reason. After 3 hours, the veggies were still hard, so nothing had happened. But it looked like it was doing it. It had “i” on the pot, so it looked like it was connected.

    I ended up writing my own script, which worked great.

    Also, the recipe cooking time is listed as 5 minutes. It would be better to list this as 3 hours or whatever it takes for the pot to do its thing.

    One of the difficulties I find in researching the instantpot is a lack of information for myself. I’ve found out the temperature settings that allow yogurt to be made, but what are the temp settings for the bone broth recipe/script indicated above? High Temp cooking destroys many of the nutrients I want to acquire. It may be faster, but it’s not healthier. I would like to know how to control the temps and keep them within range.

    Please tell me it will be possible to use the script from a MAC computer–like my Mac Book Pro. It’s the reason I bought the Bluetooth Instant Pot. I like looking for recipes and organizing them on a large screen, not on a phone. I am counting on you, Instant Pot.

    After I download the script. How do I load it into the IP application?

    If you download the recipe script in your iPhone/iPad, you can open the recipe script in the Smart Cooker app. If you download it to your computer, you can it email to your iPhone/iPad. Once the recipe script is opened in Smart Cooker app, it’s imported into the app’s DIY Recipe Script section.

    I was just reviewing the instructions on how to set the instant pot for bone broth without the app.

    Please clarify step 2 and what you mean by “wait 20 minutes”. Does this mean turn off the instant pot before running the soup function at low pressure for 30 minutes. If so, do I ventilate as well?

    Hip Pressure cooking has the non script instructions.
    cook manual high 30 minute, leave on warm for 20. repeat twice.

    Thanks Helen – I love to read such a sensible, helpful response! I gave my Smart Instant Pot to my son’s family, and I’m using my old DUO while waiting for my second Smart Instant Pot to be delivered. I’d gotten so spoiled with the Smart Instant Pot, and my heart fell when I realized I didn’t have one in the house when I decided to make broth this morning. Glad I found the recipe described so simply! :-)

    Regarding bone broth and the Instant Pot. I get extraordinary results for a long, 20 hour broth, using the slow cook function. The 20 hour broth produces a beautiful broth, with all of the vital nutrients extracted into the broth. Some researchers on this advocate cooking for 24-48 hours but I find that 20 hours is more than adequate. The Instant Pot is perfect for this. Also note that the slow cook function with the bones water and vinegar and herbs of your choice naturally has the Instant Pot going in and out of pressure. When I turned my slow cooked broth off last night at 20 hours, pressure was up and I let it go down naturally. The purchase of the Instant Pot was worth it for the 20 hour broths alone!! Thank you Instant POt!!

    Sorry for the delay. Ijust got this. I keep the vent open, however pressure does go in and out over the long cooking period. Dont close the vent. when the broth is done and cools I freeze it in a silicone muffin tray, then when frozen put the frozen cubes in a freezer bag. They dont stick once frozen and then you have a cup of great broth anytime.

    Andrea, I’m confused at how any pressure would build up inside the pot if you have the vent open for air to escape.

    What is the advantage of cloudy bone broth?

    As I understand it, clear bone broth still has the
    “collagen, gelatin, calcium and fat suspended in the soup.”

    I understand why a script is offered here. It is the newest and best thing. However, I don’t have an iPhone or an Android and would like this recipe. It will be a pain but please provide a link, at least, to a version that can be “entered”. (I have a Windows phone. When Windows 10 comes out create an app for Desktop or phone and you get both!)

    Hi there,

    Unfortunately this recipe script contains many operations. To simulate the whole process, you’ll need to run multiple steps:
    1. Run Soup function for 30 minutes at high pressure,
    2. Wait 20 minutes
    3. Run Soup function for another 30 minutes at low pressure.
    4. Repeat 2 and 3 twice.

    I am going to second this one. I am a Windows Phone user too and would love an app for it and for my Windows Tablets. (Though I still got the Instant Pot Smart and loving it! But I have an unused iPhone kicking around…)

    Of course if there was a Bluetooth API published for it, I am sure there would be those who would be happy to make an application for it.
